My Top 3 Paleo Cookie Recipes

Hi guys! Since so many people have sent me messages lately expressing interest in my paleo cookies, I decided to share my top 3 go-to paleo cookie recipes with you all. The reason I love these recipes are because they are super simple, require very few ingredients, and also take very little time to make!

Tone It Up Paleo Cookies:

Ingredients:

  • 2 bananas (mashed)

  • 1 egg (or flax egg)

  • 1 cup unsweetened coconut flakes

  • 2 scoops vanilla protein powder (I didn’t use this but they would probably be much more cakey and actually cookie-like with it)

  • Coconut oil spray (optional)

Instructions:

  1. Preheat oven 350 degrees

  2. Combine all ingredients in bowl

  3. Spray cookie sheet with coconut oil spray. add 2 tbsp of mixture and place on sheet

  4. Bake for 13 minutes

Nutrition Facts with all of the ingredients above including protein powder:

3g protein/5g carbs/2g fat/48 calories


Carolyn’s Cookies

**Not paleo but threw it in as a surprise because they’re amazing

Ingredients:

  • 2 ripe bananas 

  • 1 cup quick oats (can get gluten free)

  • ¼ cup dark chocolate chips or "enjoy life” chocolate chips

  • ½ tsp cinnamon

  • Pinch of sea salt

Instructions:

  1. Preheat oven 350 degrees and line 2 baking sheets with parchment paper

  2. Mash the bananas in a medium sized mixing bowl until most of the lumps have smoothed out

  3. Stir in the rest of the ingredients and mix well

  4. Scoop heaping tablespoon sized portions onto parchment lined sheets

  5. Bake for 15 minutes (rotate sheet halfway through)

  6. Let cool 


Paleo Almond Butter Chocolate Chip Cookies:

Ingredients

  • 1 cup of smooth Almond Butter (or any nut butter you like)

  • 1/2 cup of coconut sugar

  • 1 egg

  • 1 teaspoon baking soda

  • 3/4 cup Enjoy Life dairy free chocolate chips (or mini dark chocolate chips)

Instructions

  1. Preheat oven to 350ºF. Line a baking sheet with silicone baking mat.

  2. In a medium bowl, whisk together the almond butter, coconut sugar, egg (or flax egg), and baking soda. Fold in the chocolate chips. Let the dough rest for about 15 minutes.

  3. Using a small cookie dough scoop, form tablespoon-sized balls of dough and place onto the prepared baking sheet.

  4. Bake for 8 to 10 minutes or until set. Let them cool for at least 15 minutes on the baking sheet, then transfer them carefully to a cooling rack. They will be crumbly if you try to move them too early, so be sure to let them set up.

Paleo Chocolate Chip Cookies

Ingredients

  • ½ cup coconut oil room temperature

  • 1/2 cup of agave nectar OR  ¾ cup coconut sugar (I used agave)

  • 1 egg room temperature

  • 1 teaspoon vanilla extract

  •  ½ teaspoon baking soda

  •  ½ teaspoon salt

  •  2¼ cups (9 oz.) blanched almond flour

  • 1 cup (6 oz.) enjoy life chocolate chips or chopped dark chocolate 

  • Parchment paper

Instructions

  1.  Beat together the coconut oil and coconut sugar until smooth.

  2. Add the egg and vanilla and mix until smooth.

  3.   Add the almond flour, salt, and baking soda to the wet ingredients. Mix until well incorporated. Fold in the chopped chocolate.

    *** I did not do this part because no time for it but the recipe says to then “If you used coconut sugar, cover with plastic wrap and refrigerate for at least an hour (can prepare up to 48 hours ahead of time)”

  4. When you're ready to bake, preheat the oven to 350ºF.

  5. Scoop cookies and place on parchment lined baking sheet. **Optional - Sprinkle with flaky sea salt

  6. Bake for 10 minutes or until edges begin to turn golden brown
